spaghetti with pumpkin

i would like to share with you one of my favorite recipes; spaghetti with pumpkin. it's very easy, it's healthy and it's delicious. a friend of pascual, a real neapolitan who eats pasta/spaghetti two times a day, cooked for us and we liked it. i think the original recipe was first you boil the pumpkin, but i prefer to stir fry the pumpkin.

me gustaría compartir con vosotros una de mis recetas favoritas; el spaghetti con calabaza. es muy facil, es sana y es muy deliciosa. un amigo de pascual, un verdadero napolitano que come pasta dos veces al día, la preparó para nosotros y nos gustó. creo que la receta original era con calabaza hervida, pero prefiero cocinarlo con un poco de aceite al fuego lento.

the ingredients (for two persons): 400gr pumpkin, parmezan cheese, 1/4 onion, 2 garlic cloves, 1 cayenne (optional), olive oil, pepper, salt.
how to make:
first cut the pumpkin into slices, chop the onion and cut the garlic into two or three slices. cook everything in the frying pan with low fire and season with salt. this is the most delicate part because it requieres a lot of patience; stir them often to avoid burnt. it will be ready when the texture of the pumpkin softener and you add parmezan the cheese; mix it well. i grate it into different sizes as you can see in the picture. here you add the finely grated cheese and leave the rest as a decoration. then add the spaghetti and season with a lot of pepper. and as a final touch i add a bit of good quality of olive oil.

los ingredientes (para dos personas): 400gr de calabaza, el queso parmesano, 1/4 de cebolla, 2 dientes de ajo, cayena (opcional), aceite de oliva, pimienta negra, sal.
como se hace:
primero corta la calabaza en rodajas, pica la cebolla y corta los ajos en dos o tres. cocina todo en una sartén a fuego lento y añade la sal. esta es la parte más delicada porque se requiere mucha paciencia; remuevelo más a menudo para evitar que se queme. estará listo cuando la textura de la calabza se suaviza y añade el queso bien rallado y guarda el resto para adornar; mezcla todo bien. luego pon el spaghetti y añade mucha pimienta negra. y para un toque final, pongo el aceite de olive de mejor calidad.
